Wholewheat chocolate banana muffins

I always wondered what is the best way to feed my kids (or rather the elder one) bananas. He is the one who runs away at the mention of it. As he loves eating cakes, these whole wheat chocolate banana muffins comes to the rescue. With the goodness of whole wheat, bananas and jaggery they definitely are a healthy and yummy treat for kids. My son just loves them and that’s mission successful for me. 🙂

INGREDIENTS:

1 cup whole wheat flour

1/3 cup cocoa powder

1-1/4 cup powdered jaggery ( can also use 1 cup jaggery + 1/4 cup brown sugar)

3/4 teaspoons baking powder

3/4 teaspoon baking soda

2 medium sized bananas

1/4 teaspoon salt

1 large egg

1/2 cup (120 ml) warm water

1/4 cup (60 ml) milk

1/4 cup (60 ml) vegetable oil

1 teaspoon vanilla essence

METHOD:

Preheat oven to 180 degrees C.

Line 12 regular-sized muffin cups with paper liners.

In a large bowl whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.

Blend together the egg, bananas, water, milk, oil, and vanilla extract in a blender.

Mix the wet ingredients with the dry ingredients until combined well.

Pour the batter in the lined cups, about 3/4 full, and bake for 15-20 minutes or until a toothpick inserted in the centre of a cupcake comes out clean.

Take the cupcakes out of the oven and cool them on a wire rack.

My son can’t even wait for them to cool down and I just love it. There is no greater pleasure in life than feeding your loved ones and being appreciated.
